The Glendalough Distillery was set up by five friends from Wicklow and Dublin who shared a love of craft spirits. They eventually decided to leave the safety of their day jobs in Dublin and went into the mountains to take a chance on something more meaningful (much like the man on their bottle, St Kevin). Together they built a craft distillery near their favourite spot in those mountains where they produce award winning Whiskey, Gin and Poitín.
Glendalough (meaning The Valley of Two Lakes) is a glacial valley nestled in the Wicklow Mountains renowned for its early medieval monastic settlement founded in the 6th century by St. Kevin, the legendary monk. Monasteries like Glendalough were the birthplace of distilled drinks and St. Kevin is an eternal inspiration for the Glendalough team.
Wild Botanical Gin
To make the extraordinary Wild Botanical Gin, wild plants are sustainably foraged from the mountains around the distillery by one person, every day throughout the year. What is picked goes fresh (not dried) goes into the still within hours of being picked. The plants and botanicals are painstakingly slow-distilled to tease out their delicate flavours, in tiny batches of less than 250 liters. The cut-points are decided batch by batch, by smell and taste (never timed or automatically) as if each batch is the first. Watch the story here.
This fresh, rose-petal gin was first made to toast their head distiller’s Mum, Rose at his brother’s wedding. To make the very special small-batch Gin, Glendalough Distillery completely rebalance their aforementioned Wild Gin recipe and redistill it with extra fruit, flowers and spices...and of course a lot of fresh rose petals. Given the delicate ingredients (rose petals), it is distilled even slower and more gently than the Wild Botanical Gin with vapour distillation playing a bigger part in extracting those essential oils and flavours. Double Barrel Whiskey
A different Irish Whiskey from off the beaten track. This is an Irish whiskey that will make you think twice about Irish whiskey. Forget the blends of the last hundred years, this world beating liquid is not just part of the new breed, it’s a thoroughbred. We venture up the hills from Jerez (where most folk get their sherry casks) to Montilla, to source the finest PX grape Oloroso casks. Finished for up to a year in the rarest of all casks, virgin Irish Oak, this is a milestone for Irish whiskey.
