The first and only distillery on the Isle of Wight was licensed in 2014 by friends Xavier Baker and Conrad Gauntlett. Combining a wealth of experience in brewing and wine-making with locally sourced ingredients, they have created a range of premium spirits that express the beauty and character of the island they love.
The Isle of Wight Distillery’s signature spirit, Mermaid Gin, is hand-crafted using ten ethically sourced botanicals – three of which are grown locally on the Island. Mermaid delivers a smooth yet complex blend of fresh organic lemon zest and peppery grains of paradise, with a hint of sea air from locally foraged, fragrant rock samphire for a refreshing and invigorating serve.
The other botanicals are sourced by a father & son partnership visiting families and farmers around the world, for peace of mind that the best quality, ethically traded ingredients are selected.
Working with column stills for a smoother spirit, the process is tightly controlled capturing only the hearts of each batch - the sweet spot of any distillation. This avoids the harsher elements found in the heads and tails to create a purer gin that is perfectly balanced. Mermaid is then rested for seven days to let the flavours mellow and marry and only then cut back to 42% abv with pure island spring water.
The name Mermaid was inspired by the local name for rock samphire, ‘mermaid's kiss’. Rock Samphire only grows above the high tide line, but never far from it. The fortunate among the frequently shipwrecked sailors (smugglers) who were washed up on the island’s shoreline hauled themselves (or their illicit contraband), up the beaches until they could smell the pungent aroma of the rock samphire. This was a signal they were safe from the ravages of the sea and the rising tide behind them. It was a moment of huge relief - like the kiss of the mythical mermaid, saving lost sailors, the rock samphire was a sign they were safe from raging sea and approaching tide, on dry land.
Alongside Mermaid, the Isle of Wight Distillery produce a range of premium spirits, including whisky, the first barrel of which was laid down in 2015, Mermaid Vodka and HMS Victory-branded Navy Strength Barrel-aged Gin and Rum, which incorporates real oak from the famous warship in a unique and exclusive partnership with the National Museum of the Royal Navy. The spirit range is hand-crafted in small batches and slow distilled before being cut with local spring water and bottled on the Island. The result is an award-winning range of spirits with a contemporary style, layered complexity and signature smooth delivery.
