Entschlossen verweigert sich Savage, der Bar einen Namen zu geben. Stattdessen sind drei klassische Design-Symbole das Logo der Trinkstätte in Dalston: ein gelbes Quadrat, ein rotes Viereck, ein blauer Kreis. Am meisten wurmt den sympathischen Franzosen dabei, dass es kein Gelbes-Dreieck-Emoji gibt. Das erschwert auf komische Weise die Kommunikation. Der Instagram Account lautet: a_bar_with_shapes-for_a_name und anderenorts tauchen die Begriffe ‘Savage Bar’ oder eben ‚Bauhaus Bar‘ auf.

The New Nordic Manifesto was a conscious effort to break away from derivative cooking traditions and to focus instead on creating dishes that were local, sustainable, and ultimately very, very creative
The impact of the Manifesto did not go unnoticed by Copenhagen’s cocktail bars. We were challenged to match both the concepts and the creativity embraced by the restaurants in making our own new drinks. The result: for a relatively “small large city,” Copenhagen has had an outsize impact on the world cocktail scene.

This talk will explore the connection between the New Nordic Movement and the current Copenhagen cocktail scene, and will examine the ways in which bartenders across Copenhagen are taking inspiration from the Manifesto, Danish Design, to drive what’s become a virtual explosion of creativity in spirit production, food initiatives, Craft beer, fruit wine production, coffee & of course cocktails.
